BANANA LOAF
125 g butter
250 g castor sugar
250 g flour
2 extra large eggs
2 Tblsp yoghurt
1 tsp vanilla essence
6 ripe bananas, mashed
1 tsp bicarbonate of soda
¼ tsp salt
4 Tblsp chopped nuts (optional)
1. Preheat the oven to 180oC.
2. Cream the butter and sugar.
3. Add the eggs.
4. Sift in the dry ingredients.
5. Add the rest of the ingredients.
6. Cook for 50 minutes to 1 hour.
